Curiosity: with only a twelve-hour window when the delicate pale yellow flowers blossom, Vanilla Orchid is still today pollinated rigorously by hand. The natural process of producing Vanilla - from hand pollinating, to harvesting the fruits each ripening at its own time, to their long curing and drying - is incredibly labour-intensive, which makes it the second most expensive spice after saffron. Two cultivars are mainly used in Perfumery: Vanilla Planifolia ("flat-leaved"), native to Mexico, it flourishes in Madagascar, Mauritius and Réunion, (named Île Bourbon during the French occupation, after the ruling family, the Bourbons, ence also the name Bourbon Vanilla), and Vanilla Tahitensis, from French Polynesia.
