Fun Fact: Fresh Iris Rhizomes are almost odorless, they must be dried for three to six years to develop the characteristic scent. They are then steam distilled to produce a thick, oily compound, known in Perfumery as Iris Butter or Orris Oil, which solidifies as a cream-colored, wax-like mass, known as Orris Concrete. In Florence, "Il Giardino dell'Iris", one of the most famous of its kind in the world, hosts an annual competition among growers of this flower.
